Waikiki Meatballs

Some ginger in the meatballs along with a mild sweet and sour pineapple sauce gives these meatballs a Polynesian feel. They are great served with  rice and stir fried vegetables. This is a great dish for pot lucks. This has long been a favorite in our family.


1 lb Ground Turkey or Chicken
1 lb Lean Ground Beef
3/4 cup Bread Crumbs
1/2 cup Onions, minced
1 Egg
1 1/2 tsps Salt
1 tsp ginger
1/3 cup Milk
Olive or Peanut Oil to brown meatballs
3 Tbsp Cornstarch
3/4 cup Brown Sugar
1 20 oz can Pineapple Chunks, drain and reserve syrup
1/2 cup Vinegar
1 1/2 Tbsp Soy Sauce
1/2 cup Green Pepper, Diced


In a large mixing bowl lightly beat milk and egg together.  Stir in the onions, bread crumbs, salt and ginger. Add ground meats and mix thoroughly.  Measure out rounded tablespoons of the meat mixture and roll into balls.  Heat oil in a skillet and brown and cook the meatballs until cooked through. Remove the meat balls and keep them warm while you make the sauce. Drain all of the fat from the skillet.  Add the brown sugar and cornstarch to the skillet and mix well. Add the reserved pineapple juice, vinegar,and soy sauce and stir until sugar and starch are dissolved. Cook over medium heat until the mixture is thick and boiling.  Add the pineapple chunks, green pepper, and the meatballs and continue cooking until warmed through.  Serve over rice or with a side of fried rice.
