Corned Beef and Vegetables in the Pressure Cooker

Pressure Cooked Corned Beef with Vegetables

Corned beef, a traditional favorite, made quickly and easily using the Fagor Multi-cooker or Instant Pot pressure cooker.  


3-4 lb Corned Beef Brisket
Water  or beef broth to cover meat
1 Small Head Cabbage, cut into 6 wedges
6  Medium Red Potatoes
3 Large Carrots, cut into 2 inch
6 cloves garlic, mince
1 large onion quartered

Option 1:

1/2 to 3/4 cup vinegar

Option 2:

1 teaspoon yellow mustard seeds
1 teaspoon whole black peppercorns
1 teaspoon coriander seeds
1/2 teaspoon whole allspice
3 whole cloves
3 bay leaves
Optional: 1/2 teaspoon ground ginger

Option 3:

12 ounces of beer


Some experimentation is required to find your personal taste when it comes to seasoning.  Put the corned beef in the Fagor multi-cooker or Instant Pot and cover with water or beef broth (about 4 cups) add crushed garlic and quartered onion.  Add either vinegar or beer.  Add pickling spices if desired.  Close the cooker and cook on high pressure for 90 minutes.  let pressure release naturally for 10 minutes. Remove the corned beef and wrap it aluminum foil until ready to serve.  Add potatoes, cabbage, and carrots to the juice in the cooker.  Close and cook on high pressure for 3 minutes.  Quick release pressure and check potatoes.  If not completely cooked cook on saute setting until potatoes are fully cooked.o
