Rarely is there time at our place to have breakfast in the morning. Occasionally, There are Saturdays when the opportunity presents itself. This is great Saturday morning breakfast recipe with potatoes, onions, bell peppers, mushrooms and sausage. It takes a little time but is worth it.
1/2 a large Onion, diced ( I leave the pieces large enough to make it easy for the finicky eaters to extract)
1 large Green Pepper, diced ( half green and half red adds a little color to the mix and same caveat on the size as with the onions)
4 oz Fresh Mushrooms, sliced (studies have shown that mushrooms taste better when they are a little older I buy them cheaper that way or I can keep them longer and they just get better)
1 lb. Pork Sausage, (original, sage, or hot for slightly different flavor)
4 lbs Yukon Gold Potatoes, diced
2 Tbs Olive Oil
2 Tbs Butter
Heat the butter in a deep saute pan (I use my 5 quart non- stick saute pan ) and add the diced potatoes. Fry for about 5 minutes tossing frequently. Turn heat to low and cover to steam potatoes while the rest of the ingredients are cooked. In a saute pan (I use my non-stick pan) heat two tablespoons of olive oil and saute the onions until soft then add the peppers and the mushrooms and saute lightly. Transfer the sauteed vegetables to another container and brown the sausage in the same pan. Drain the grease from the sausage and add to the potatoes. Add the cooked vegetables to the potato and sausage and toss lightly and cook until the potatoes are fully cooked. Serve with eggs prepared any style.
