This is a delicious recipe for a tomato bisque soup that can be made on the stove top, in the Vitamix© blender or as I do it a combination of the two. It is great with grilled cheese sandwiches.
1 cup celery, chopped ( I use the inner most part of the celery stock including the leaves)
3/4 cup carrot, slice (I wash them but I leave the peels on)
1/4 cup onion chopped
1 tbsp butter
1 tbschicken broth
1 cube chicken boullion
1 tsp salt
2 Tbsp sugar
1 tsp dried crushed basil
1/2 tsp dried crushed oregano
1/2 tsp ground black pepper
3 oz. tomato paste
1 14 1/2 oz. can diced tomatoes
3 cups tomato juice
1/4 cup fresh basil, minced
1 cup whipping cream
pesto sauce and fresh basil for garnish
Put celery, carrots, onions, garlic, butter, dried oregano and basil, salt, sugar, bullion cube, tomato paste, and chicken broth into the Vitamix© Blender. Start the blender on the lowest variable speed and ramp it up very slowly until mixture is smooth and homogenized. Switch to high speed for about 7 minutes until mixture is steaming hot add tomato juice and continue blending another two to three minutes. Stop blender and pour into sauce pan and add diced tomatoes. Bring to a boil and turn down heat and simmer for about 30 minutes. Add fresh basil and cream and allow to return to a slow boil. Remove from heat and dish into serving bowls. Garnish each bowl with pesto sauce and fresh basil.
